Ingredients for making ice cream at home

Glucose syrup

Glucose syrup is a key ingredient when making ice cream. Why? Glucose syrup is better suited than regular sugar at binding water molecules. And you don’t want any unwelcome ice crystals in your ice cream. So adding glucose syrup to your ice cream base will ensure a smoother ice cream. Xanthan gum and other stabilizers

Xanthan gum is also a useful ingredient, because it helps stabilize the ice cream base and results in better texture and less icy ice cream. This is due to the fact that it prevents the formation of large ice cream crystals. While ice cream parlours use commercial stabilizers in their ice cream, you can easily reach the same results at home with xanthan gum. Citric acid

Making a sherbet? Then citric acid is your friend. Citric acid will brighten fruit sherbets without having to add more liquid to your ice cream as you would when using lemon juice, for example.
